Ingredients

  • 1.5c awakened sourdough starter
  • 2c lukewarm water
  • 1c whole wheat flour
  • 4-5c all-purpose flour
  • 1 tbsp olive oil
  • 2 tsp salt

Steps

  1. Mix all ingredients, and knead to appropriate level and firmness (4-5 minutes).
  2. Shape into a ball and place in an oiled bowl, turning the ball of dough around once to coat the top with oil.
  3. Cover tightly and place in a warm spot (like an oven with the light turned on) for at least two hours or until the dough has doubled, or in fridge for 12-24 hours.
  4. Remove dough from bowl, and form into two loaves. Place loaves into two prepared pans. Cover with a kitchen towel and let them stand in a warm place for at least two hours (~four hours, if coming from fridge) or until the dough rises above the top of the loaf pans.
  5. Bake at 425 degrees for 45 minutes.
  6. Remove from oven and let cool before slicing.
